The Fermentation Farm is the area where the wort meets the yeast and becomes beer! Each of the 24’ tall Fermenters holds 180 barrels, or 5,580 gallons, of beer; so it takes five batches to fill each Fermenter. The wort from the Whirlpool (see previous tour) is pumped into these large Fermenters via hard pipe and brewer’s hose. You can see some of the hose near the door at the front of the aisle. The yeast eats the sugars from the wort and produces alcohol and CO2, at this point the wort has become beer. All of our Fermenters feature conical bottoms. These allow us to harvest the yeast after it has done its work and pump it into another Fermenter to start all over again. After aging at near freezing temperatures for another two or three weeks, the beer is ready to head through the Filter and into the Bright Tanks.
